WE PRODUCE AN OLIVE JUICE THAT STANDS OUT FOR ITS BALANCE BETWEEN BITTERNESS AND PIQUANCY, WHICH GIVES IT A VERY BALSAMIC SENSATION, WITH AN EPHEMERAL TEXTURE

For the production of CENT-i-98 Olive Oil, the family-owned estate is treated with totally organic and ecological products with a careful record being kept and evaluated internally, as well as by external advisors and also the Catalan Council of Organic Agricultural Production (CCPAE). These processes take place throughout the year.

The olives are harvested at the beginning of November, and this event is personally supervised by us and we also actively participate with specialised collaborators with a clear objective and priority: to obtain an oil of very low acidity (see product description).

This indicates that it is a first level Extra Virgin Olive Oil, since the lower the acidity, the greater the quality of the oil. It is an indication that the production process has been carried out with highly demanding quality parameters such as, for example, the fact that the time between harvesting and grinding the fruit in the oil mill is reduced to 1 hour, thus maintaining  all of its properties.

THE OLIVES ARE COLLECTED DIRECTLY FROM THE TREE, SO THAT THEY ACTUALLY DO NOT TOUCH THE GROUND

All of this allows us to elaborate an oil with totally fresh olives, which are harvested at their optimum point of ripeness, to achieve an intense fruity Extra Virgin Olive Oil (EVOO), with a very high aromatic complexity and marked green notes on the nose. Hence, we obtain a first cold-pressed EVOO, at a maximum temperature of 21 °C, and only through mechanical procedures and ecological treatments, which do not modify its aroma, texture and natural composition.

The oil is filtered from the first moment to avoid impurities that may diminish the quality of the oil, giving it maximum clarity (translucency) and purity that guarantees adequate conservation. The bottling process is undertaken in a highly polished, stainless steel container with an environment that is protected using argon gas that minimises the oxidation of the oil, until the moment of packaging in a darkened bottle, which is prepared and wrapped by ourselves, that protects the oil from the light, thus guaranteeing its properties.

The whole process is carried out by the master craftsman of the oil mill and under our supervision. This particular master craftsman who has agreed to grind our olives in his mill, also passes preliminary inspections over our estate and olive trees and he is always very careful with the olives he accepts from us, regarding cleanliness, humidity, ecological treatments, conditions at the time of harvest, and other important factors.
